Celery (Apium graveolens) is a small plant of the Apiaceae family with many erect, fleshy stems topped with dark-green leaves. If not harvested for culinary purposes, it produces clusters of tiny white flowers, typical of the members of this family such as wild carrots, angelica or anise. These flowers turn into edible, tasty seeds that can be steam distilled to produce a fragrant essential oil.
